Witbier Ingredients

Method

Brewing Directions

  1. 1

    Mashing the Grains

In a large pot, heat 5 liters of water to 160°F (71°C). Add the pale malt, wheat malt, and oats. Stir well and maintain the temperature for 60 minutes.

  2. 2

    Sparging

After 60 minutes, sparge the grains with hot water (around 170°F or 77°C) until you collect around 6 liters of wort.

  3. 3

    Boiling the Wort

Bring the collected wort to a boil. Once boiling, add the Hallertau hops and boil for 60 minutes.

  4. 4

    Adding Flavorings

In the last 15 minutes of the boil, add the coriander and bitter orange peel to the wort.

  5. 5

    Cooling the Wort

After the boil, cool the wort quickly using an immersion chiller or an ice bath until it reaches around 70°F (21°C).

  6. 6

    Fermentation

Transfer the cooled wort to a sanitized fermenter. Pitch the yeast and seal with an airlock. Allow the fermentation to occur for 1-2 weeks at a stable temperature of around 68-72°F (20-22°C).

  7. 7

    Bottling

After fermentation is complete, sanitize bottles and caps. Siphon the beer into the bottles, leaving about an inch of headspace. Cap the bottles.

  8. 8

    Carbonation

Allow the bottles to carbonate at room temperature for 1-2 weeks before refrigerating.

  9. 9

    Enjoying

Once carbonated, chill the bottles, pour into a glass, and enjoy your Stonecloud Neon Sunshine Witbier!
