    Prepare the Beef Tenderloin

    Season the beef tenderloin with salt and pepper to taste. Heat a grill or skillet over medium-high heat and sear the tenderloin for 4-5 minutes on each side until it reaches your desired doneness (medium-rare is recommended). Let it rest for 10 minutes before slicing.

    Make the Coleslaw

    In a large bowl, combine the coleslaw mix with a dressing of your choice (mayonnaise, vinegar, and seasoning) and toss until well coated. Set aside to let the flavors meld.

    Prepare the Avocado

    Slice the avocados in half, remove the pit, and scoop the flesh out. Cut the avocado into thin slices and set aside.

    Slice the Fresno Peppers

    Thinly slice the Fresno peppers for garnish. You can remove the seeds if you prefer less heat.

    Heat the Tortillas

    Warm the tortillas in a skillet or directly over the flame of a gas stove for about 30 seconds on each side until they are pliable and slightly charred.

    Assemble the Tacos

    On each tortilla, layer slices of the beef tenderloin, a scoop of coleslaw, a few slices of avocado, a spoonful of roasted salsa, pickled red onions, Fresno peppers, and a sprinkle of queso fresco. Garnish with fresh cilantro.
