In a small saucepan, combine 1 cup water, the grated ginger, and 1 cup of sugar (if desired for sweetness; adjust to taste). Bring to a boil over medium heat, stirring until the sugar dissolves. Remove from heat and let the syrup cool. Once cool, strain out the ginger and set the syrup aside.

Mix the Fruit Base
In a blender, combine the diced mango and pineapple juice. Blend until smooth. If desired, strain the mixture through a fine-mesh sieve to remove any pulp for a smoother texture.

Combine Ingredients
In a large glass or cocktail shaker, combine the mango-pineapple blend, fresh lime juice, and the simple syrup. Stir well to combine.

Add Jalapeño
Add the sliced jalapeño to the mixture according to your heat preference. Stir gently to incorporate the flavor.

Serve the Mocktail
Fill a glass with ice, pour the prepared mixture over the ice, and top it off with Topo Chico sparkling water. Stir gently to combine.

Garnish your mocktail with fresh basil leaves for an aromatic finish. Optionally, add a slice of lime or more jalapeño for decoration.
