Cooking the Dumplings

Roll out the wrappers
After the dough has rested, divide it into small pieces and roll each piece into a thin circle about 3 inches in diameter.

Fill the dumplings
Place a tablespoon of the filling in the center of each wrapper. Fold the wrapper over the filling to create a half-moon shape, pressing the edges to seal. Make sure there are no air pockets.

Cook the dumplings
To steam, place dumplings in a steamer basket over boiling water and steam for about 10-12 minutes. To pan-sear, heat oil in a skillet over medium heat, add dumplings, and cook for 2-3 minutes until the bottoms are golden, then add a splash of water and cover to steam for 5-7 minutes.
