Mocktails
- 1
Prepare the Rice
Rinse the long grain white rice under cold water to remove excess starch. This helps to ensure a smoother texture in your horchata.
- 2
Soak the Rice
In a large bowl, combine the rinsed rice and 4 cups of water. Let it soak for at least 4 hours or overnight to soften the rice.
- 3
Blend the Mixture
After soaking, drain the rice and add it to a blender along with the 4 cups of fresh water. Blend on high until the mixture is fully combined and smooth.
- 4
Strain the Horchata
Using a fine mesh strainer or cheesecloth, pour the blended mixture into a large bowl or pitcher. This will separate the liquid from the rice solids. Use a spatula to press down and extract as much liquid as possible.
- 5
Add Sweetness and Flavor
To the strained liquid, add the sweetened condensed milk, vanilla extract, and ground cinnamon. Stir well to combine all ingredients thoroughly.
- 6
Chill the Horchata
Refrigerate the horchata for at least 1 hour to chill and allow the flavors to meld together.
- 7
Serve with Ice
To serve, fill a glass with ice cubes and pour the chilled horchata over the ice. Grate fresh nutmeg on top to taste, and sprinkle a small pinch of ground cinnamon for garnish.
