Tavern Salad Recipe
Our house salad of mixed greens served with fresh tomatoes, cucumbers, corn, carrots, onions, and wild mushrooms.

Prepare the Vegetables
Wash the mixed greens thoroughly under cold water. Pat dry with a salad spinner or paper towels.

Chop the Tomatoes
Dice the fresh tomatoes into bite-sized pieces and place them in a large mixing bowl.

Slice the Cucumber
Peel the cucumber if desired. Slice it in half lengthwise, then cut it into thin half-moon shapes and add to the mixing bowl.

Add Corn
If using fresh corn, cut the kernels off the cob. If using canned corn, drain and rinse it. Add the corn to the mixing bowl.

Grate the Carrots
Using a box grater or food processor, grate the carrots and add them to the mixing bowl.

Sauté the Mushrooms
In a skillet over medium heat, add a tablespoon of olive oil. Once hot, add the wild mushrooms and sauté until they are golden and tender, about 5 minutes. Allow them to cool slightly before adding them to the salad.

Make the Dressing
In a small bowl, whisk together the olive oil, balsamic vinegar, salt, and black pepper to taste.

Combine Ingredients
Add the mixed greens to the bowl with the other vegetables. Drizzle the dressing over the top and toss gently to combine all ingredients.

Serve
Transfer the salad to a large serving platter or individual bowls and serve immediately.
