Preheat the Oven
Preheat your oven to 400°F (200°C).
Roll Out the Dough
On a floured surface, roll out the refrigerated dough to about 1/8 inch thick. Cut rounds to fit your pie dishes.
Fill the Pies
Spoon the vegetable filling into each pie dish, filling them about 3/4 full. Place the rolled dough over the top and crimp the edges to seal.
Egg Wash
In a small bowl, whisk together the egg and milk. Brush the mixture over the crusts to give them a golden finish.
Bake
Place the assembled pot pies in the preheated oven and bake for 25-30 minutes, or until the crust is golden brown.
