Prepare the dough
In a large mixing bowl, combine warm water and active dry yeast. Let it sit for about 5 minutes until frothy.

Add the all-purpose flour, salt, and olive oil to the yeast mixture. Mix until a shaggy dough forms.

Knead the dough on a floured surface for 8-10 minutes until smooth and elastic.

Place the kneaded dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour or until doubled in size.

Pour in the white wine and let it simmer for about 5 minutes to reduce slightly.

Add diced tomatoes and sliced wild mushrooms to the skillet. Cook for an additional 5-7 minutes until the mushrooms are tender. Season with salt and pepper to taste.

Assemble and bake
Preheat the oven to 450°F (230°C).

After the dough has risen, punch it down and roll it out into a flat oval or rectangle shape on a floured surface.

Transfer the rolled dough to a baking sheet lined with parchment paper. Brush the surface lightly with olive oil.

Sprinkle shredded cheese over the top and bake in the preheated oven for 15-20 minutes or until the edges are golden brown and the cheese is bubbly.
