    Prepare the Mussels

    Rinse the fresh mussels under cold running water to remove any sand or debris. Discard any mussels that are open and do not close when tapped.

    Sauté Garlic and Tomatoes

    In a large pot, heat a tablespoon of olive oil over medium heat. Add the minced garlic (4 cloves) and sauté for about 1 minute until fragrant. Then, add the diced tomatoes and cook for 3-4 minutes until they have softened.

    Steam Mussels

    Pour the Belgium Ale into the pot with the sautéed garlic and tomatoes. Bring to a simmer, then add the cleaned mussels to the pot. Cover and steam the mussels for about 5-7 minutes, or until they have fully opened.

    Add Spices and Cheese

    Once the mussels are cooked, stir in the West Indies spices and mix well. Remove from heat and sprinkle the shredded cheese over the top. Cover for an additional minute to allow the cheese to melt slightly.

    Serve

    Serve the mussels hot in a large bowl, accompanied by baked garlic bread for dipping. Optionally, serve with frites and aioli dipping sauce for a traditional experience.
