    Prepare the Italian Toast

    Preheat your oven to 400°F (200°C). Place the slices of Italian bread on a baking sheet and brush both sides with olive oil. Toast in the oven for about 5-7 minutes or until golden brown and crispy. Set aside.

    Cook the Shallots and Tomatoes

    In a large skillet, heat 2 tablespoons of butter over medium heat. Add the minced shallots and sauté until they become translucent, about 2-3 minutes. Add the halved cherry tomatoes and cook for another 2-3 minutes until the tomatoes start to soften.

    Add the Shrimp

    Increase the heat to medium-high, then add the jumbo shrimp to the skillet. Season with salt and black pepper. Cook for 3-4 minutes, stirring occasionally, until the shrimp turn pink and opaque.

    Deglaze with Wine and Lemon

    Pour in the white wine and lemon juice, scraping up any bits from the bottom of the skillet. Bring to a simmer and let it cook for about 2-3 minutes to reduce slightly.

    Finish the Sauce

    Reduce the heat to low and stir in the remaining 2 tablespoons of butter until melted and the sauce is creamy. Stir in the chopped parsley.

    Serve

    To serve, place the toasted Italian bread on plates, spoon the shrimp and sauce over the top, and garnish with additional parsley if desired.
