1. Prepare the Rapini

Blanch the rapini in boiling salted water for about 2-3 minutes until tender. Drain and set aside.

2. Cook the Sausage

In a large skillet, heat olive oil over medium heat. Add the Italian sausage, breaking it up with a spoon. Cook until browned and cooked through, about 5-7 minutes.

3. Combine Ingredients

Add the blanched rapini to the skillet with the sausage. Stir in the red pepper flakes, salt, and black pepper. Cook for an additional 2-3 minutes, allowing the flavors to meld.

4. Add Mozzarella

Remove the skillet from heat and sprinkle the mozzarella cheese on top. Cover the skillet and let it sit for 2-3 minutes until the cheese is melted.

5. Serve

Serve hot, drizzled with a little more olive oil if desired.
