Method

Meatballs

1

Prepare the meatball mixture

In a large bowl, combine ground beef, breadcrumbs, grated Parmesan cheese, egg, minced garlic, chopped parsley, salt, and black pepper. Mix until well combined.

2

Form the meatballs

Shape the mixture into small meatballs, about 1 inch in diameter.

3

Cook the meatballs

Heat olive oil in a skillet over medium heat. Add the meatballs and cook until browned on all sides and cooked through, about 10-12 minutes. Remove from heat and set aside.

Salad

4

Prepare the salad

In a large bowl, combine mixed greens, cherry tomatoes, cucumber, and red onion.

5

Dress the salad

In a small bowl, whisk together olive oil, balsamic vinegar, salt, and black pepper. Pour over the salad and toss to coat.

Assembly

6

Assemble the dish

On a serving plate, place a scoop of the salad, top with cooked meatballs, and add a scoop of ricotta cheese on the side.
