Roast the Beets
Preheat the oven to 400°F (200°C). Wash and trim the beets, then wrap them in aluminum foil. Place them on a baking sheet and roast for about 45-60 minutes, or until fork-tender. Let them cool, then peel the skin off.

Prepare Whipped Ricotta
In a bowl, combine the ricotta cheese, walnut oil, salt, and black pepper. Use a fork or a hand mixer to whip the mixture until smooth and creamy.

Toast the Walnuts
In a dry pan over medium heat, toast the walnuts for about 5-7 minutes until fragrant and lightly browned, stirring frequently. Remove from heat and let cool.

Assemble the Dish
Slice the roasted beets and arrange them on a plate. Spoon the whipped ricotta over the beets, sprinkle with toasted walnuts, and drizzle with additional walnut oil. Garnish with fresh herbs.
