    Prepare the Gnocchi

    Boil the potatoes until tender. Once cooked, peel and mash them until smooth. Let them cool slightly before mixing in flour, egg yolk, and salt to form a dough. Roll the dough into logs and cut into small pieces to form gnocchi. Press each piece with a fork to create ridges.

    Make the Pomodoro Sauce

    In a skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant. Crush the canned tomatoes and add them to the skillet. Stir in fresh basil and let the sauce simmer for about 15 minutes until slightly thickened. Season with salt to taste.

    Cook the Gnocchi

    Bring a large pot of salted water to a boil. Carefully add the gnocchi and cook until they float to the surface (about 2-3 minutes). Remove the gnocchi with a slotted spoon and transfer to the skillet with the pomodoro sauce. Gently toss to coat.

    Bake with Cheese

    Preheat the oven to 200°C (400°F). Transfer the gnocchi and sauce to a baking dish. Sprinkle shredded mozzarella and grated parmesan over the top. Bake for 15-20 minutes until the cheese is melted and bubbly.

    Serve

    Remove from the oven, let it cool slightly, and garnish with additional basil leaves if desired. Serve warm and enjoy!
