    Prepare Vanilla Base

    In a medium saucepan, combine the whole milk, heavy cream, and sugar. Heat over medium heat, stirring until the sugar is completely dissolved. Remove from heat and stir in vanilla extract. Allow the mixture to cool, then refrigerate for at least 2 hours.

    Prepare Chocolate Base

    In another bowl, mix cocoa powder, additional sugar, and a pinch of salt. Gradually add a small amount of the cooled vanilla mixture to the cocoa powder to create a smooth paste. Once smooth, stir in the remaining vanilla mixture and mix well. Refrigerate for at least 2 hours.

    Churn Gelato

    Once both mixtures are chilled, churn the vanilla base in an ice cream maker according to the manufacturer's instructions until it reaches a soft-serve consistency. Transfer to a container and freeze for about 30 minutes.

    Churn Chocolate Gelato

    Repeat the churning process for the chocolate mixture in the ice cream maker. Once it reaches a soft-serve consistency, transfer to a separate container and freeze for about 30 minutes.

    Serve

    Once both gelato bases are firm, scoop and serve in bowls or cones, alternating between vanilla and chocolate.
