    Prepare the crust

    Preheat your oven to 350°F (175°C). In a medium bowl, combine the graham cracker crumbs and melted butter until well mixed. Press the mixture into the bottom of a 9-inch springform pan to form an even crust.

    Make the cheesecake filling

    In a large mixing bowl, beat the cream cheese until smooth. Gradually add the granulated sugar and continue to mix until well combined. Add the sour cream and vanilla extract, mixing until smooth. Finally, add the eggs one at a time, mixing just until incorporated. Do not overmix.

    Bake the cheesecake

    Pour the cream cheese filling over the prepared crust in the springform pan. Bake in the preheated oven for 50-60 minutes, or until the center is set and only slightly jiggly. Turn off the oven and crack the door, allowing the cheesecake to cool in the oven for 1 hour.

    Chill and serve

    Remove the cheesecake from the oven and let it cool completely at room temperature. Once cooled, refrigerate for at least 4 hours, preferably overnight. Before serving, top with fresh berries.
