Make pico
Combine the diced tomatoes, diced white onion, chopped cilantro, minced jalapeño (if using), lime juice and 1/2 tsp salt in a medium bowl. Stir gently to combine. Taste and adjust salt or lime as needed. Let sit at room temperature while you prepare the beef so flavors meld (10–15 minutes).

Cook aromatics
Heat 1 tsp vegetable oil in a large skillet over medium-high heat. Add the finely chopped yellow onion and sauté 2–3 minutes until soft and translucent.

Brown beef
Add 1 lb ground beef to the skillet. Use a spatula to break it into small pieces. Cook 5–7 minutes, stirring occasionally, until the beef is browned and no longer pink.

Season and simmer
Stir in 2 tsp chili powder, 1 tsp ground cumin, 1 tsp paprika, 1/2 tsp garlic powder, 1/2 tsp onion powder, 3/4 tsp salt, 1/4 tsp black pepper, and 1 tbsp tomato paste. Mix thoroughly so spices coat the meat. Pour in 1/4 cup water, reduce heat to medium-low, and simmer 3–5 minutes until the sauce thickens slightly and the flavors meld. Taste and adjust seasoning if needed. Keep warm.

Warm shells
Preheat oven to 350°F (175°C). Place the hard shell corn tortillas on a baking sheet in a single layer and heat for 3–5 minutes until warm and slightly crisp. Alternatively, heat in a skillet 20–30 seconds per side.

Assemble tacos
Divide the seasoned ground beef evenly among the 6 warm shells (about 2–3 tablespoons per shell, more as desired). Top each with shredded Colby Jack cheese (about 2–3 tbsp), a small handful (about 2–3 tbsp) of shredded lettuce, and 1–2 tablespoons of pico de gallo. Finish each taco with a dollop (about 1 tbsp) of sour cream. Serve immediately so shells remain crisp.

Serving suggestion
Serve the Social Supreme with lime wedges and extra pico and sour cream on the side. If desired, offer hot sauce or sliced jalapeños.
