Soak (preferred) or quick‑prep
Sort the dried beans, discarding any stones or shriveled beans. Rinse under cold water. For best texture, cover beans with 3 inches of cold water and soak in the refrigerator for 6–8 hours or overnight. If short on time, use the quick-soak method: place beans in a large pot, cover with 3 inches of water, bring to a boil for 2 minutes, remove from heat and let sit, covered, for 1 hour; then drain and rinse.

After soaking (or quick-soak), drain and rinse the beans. Reserve.

Peel and finely dice the yellow onion. Core, seed and dice the green bell pepper. Trim and dice the celery. Mince the garlic cloves. Keep the vegetables separate from the beans until ready to sauté.

If using a ham hock or smoked turkey leg, rinse lightly. Slice the andouille sausage into 1/4–1/2 inch rounds. This section's meats will flavor the cooking liquid and add texture later.

Measure out seasonings: bay leaves, thyme, paprika, cayenne, Creole seasoning, salt and pepper. Have file powder ready to finish if using.

Chop the fresh parsley and thinly slice the green onions (white and green parts separated if desired). Keep cooked rice warm to serve with the beans.
Cook the Red Beans

Sauté the vegetables and brown sausage
In a large Dutch oven or heavy pot over medium heat, add 2 tbs vegetable oil. When shimmering, add the sliced andouille and cook 3–4 minutes until it releases some fat and starts to brown. Remove about half the sausage to a bowl for finishing. Add the diced onion, bell pepper and celery (the 'holy trinity') to the pot and sauté 6–8 minutes until softened and beginning to caramelize. Add the minced garlic and cook 30–45 seconds until fragrant.

Build the pot
Return the reserved sausage to the pot (optional: add the ham hock or smoked turkey leg now). Add the drained beans, 6 cups chicken broth and 1 cup water (or enough liquid to cover by about 1 inch). Stir in bay leaves, dried thyme, smoked paprika, cayenne, and Creole seasoning. Bring the mixture to a gentle boil over medium-high heat.

Simmer gently
Once boiling, reduce heat to low so the pot maintains a gentle simmer. Partially cover and cook 1.5–2 hours, stirring every 20–30 minutes to prevent sticking. As the beans cook, some liquid will reduce — if the pot looks dry, add up to 1 cup additional water or broth at a time. Taste after about 1.25 hours for tenderness; cooking time varies with bean age. Remove any foam with a spoon during the first 15 minutes if present.

Mash to thicken (optional)
When beans are tender and creamy (but still holding some shape), remove 1–2 cups of beans and mash them with a fork or potato masher, then stir back into the pot to naturally thicken the sauce. Alternatively, use the back of a wooden spoon against the side of the pot to break down some beans.

Finish and season
If using a ham hock, remove it, skim off excess fat, shred the meat and return the meat to the pot, discarding the bone and any very tough skin. Stir in 1 tbs unsalted butter if using. Taste and adjust seasoning — add kosher salt (start with the listed 1 tsp, more if needed), black pepper, and a little more Creole seasoning or cayenne if you prefer more heat. Stir in chopped parsley and most of the sliced green onions, reserving some for garnish. If using file powder, sprinkle up to 1/2 tsp now and stir; do not boil after adding file or it becomes stringy.
To Serve

Spoon hot cooked rice into shallow bowls. Ladle generous portions of red beans over the rice. Garnish with remaining sliced green onions and additional chopped parsley. Serve with hot sauce on the side if desired.
