House-made Sour Mix (makes ~10 oz)

House-made Sour Mix

Juice fresh lemons and limes until you have 1 cup of each. Strain the juice through a fine mesh sieve to remove pulp and seeds.

Combine 1 cup lemon juice, 1 cup lime juice, and 1.5 cups simple syrup in a clean container. Stir or whisk until fully combined. If using egg white for a silky texture, add the egg white and dry-shake (no ice) for 10–15 seconds, then refrigerate.

Store the sour mix in a sealed container in the refrigerator for up to 7 days. Shake or stir before using.

Prepare glass
If desired, chill a rocks or coupe glass by filling it with ice water while you make the cocktail, then discard the ice water before pouring or fill the serving glass with fresh serving ice.

In a cocktail shaker add 6 ice cubes, 2 oz Corazon Reposado Tequila, 1 oz orange liqueur, 1 oz house-made sour mix, and 0.75 oz fresh lime juice.

Shake vigorously for 12–15 seconds until well-chilled and slightly frothy.

Discard chilling ice or remove ice from the serving glass and fill with 1 cup fresh ice if serving on the rocks; alternatively, strain into a chilled coupe without ice for a straight-up presentation.

Double strain the cocktail (through the shaker strainer and a fine mesh strainer) into the prepared glass.

Garnish with a lime wheel or wedge on the rim. Serve immediately.
