Smashing & Mixing

    Muddle

    In a cocktail shaker or mixing glass, place the fresh pineapple chunk and mint leaves. Add the 0.25 oz simple syrup only if your pineapple is not very sweet. Gently muddle 6–8 times — press to release juices and oils but avoid pulverizing the mint into bits.

    Add spirits & citrus

    Add 2 oz Buffalo Trace bourbon, 1 oz pineapple purée, and 0.5 oz fresh lime juice to the shaker with the muddled fruit and mint.

    Shake

    Fill the shaker with ice, cap, and shake vigorously for about 10–12 seconds until well chilled and slightly diluted.

Build & Finish

    Fill a rocks glass with crushed ice. Fine-strain (or double-strain if you prefer) the shaken mixture into the glass to remove larger bits of mint and pineapple solids.

    Top with approximately 3 oz ginger ale, gently stir once or twice to integrate without flattening the soda.

    If desired, add a large ice cube or sphere for slower dilution.

    Garnish with a lime wheel on the rim and a small sprig of mint (slap the mint between your palms first to release aroma) tucked into the top of the drink. Optionally place a small pineapple wedge on the rim.
