    Prepare the Potatoes

    Wash and peel the potatoes, then cut them into bite-sized cubes. Place them in a large pot of cold salted water and bring to a boil. Cook for about 10-15 minutes or until tender. Drain and let cool.

    Make the Dressing

    In a large bowl, combine mayonnaise, Dijon mustard, apple cider vinegar, salt, and black pepper. Mix until well combined.

    Combine Ingredients

    Add the cooled potatoes, diced celery, chopped red onion, and chopped hard-boiled eggs to the bowl with the dressing. Gently fold everything together until the potatoes are well coated.

    Add Fresh Herbs

    Fold in the chopped fresh dill and sprinkle paprika on top.

    Chill and Serve

    Cover the potato salad and refrigerate for at least 1 hour to let the flavors meld. Serve chilled or at room temperature.
