Corn Nuggets Preparation
1. Prepare the Batter
In a large mixing bowl, combine the all-purpose flour, cornmeal, baking powder, salt, and black pepper. Mix well.
2. Mix Wet Ingredients
In a separate bowl, whisk together the egg and milk. Slowly add this mixture to the dry ingredients, stirring until just combined.
3. Incorporate Corn
Fold in the sweet corn kernels into the batter until evenly distributed.
4. Heat the Oil
In a deep skillet or frying pan, heat the vegetable oil over medium heat until hot (about 350°F or 175°C).
5. Fry the Nuggets
Using a spoon or small scoop, drop spoonfuls of the batter into the hot oil. Fry in batches, being careful not to overcrowd the pan, for about 3-4 minutes or until golden brown. Flip halfway through cooking.
6. Drain and Serve
Once cooked, remove the nuggets from the oil and place them on a paper towel-lined plate to drain excess oil. Serve warm with honey mustard on the side.
