Preparation Steps
- 1
Prepare the Oysters
Preheat your oven to 375°F (190°C). Carefully shuck the oysters and place them on a baking sheet. Keep the oyster liquor in the shells for added flavor.
- 2
Cook the Bacon
In a skillet over medium heat, cook the bacon until crispy. Remove and drain on paper towels, then crumble into small pieces.
- 3
Sauté the Spinach and Artichokes
In the same skillet, add the butter and minced garlic, sautéing until fragrant. Add the spinach and cook until wilted. Stir in the artichoke hearts, lemon juice, salt, and black pepper. Cook for an additional 2-3 minutes.
- 4
Mix the Filling
In a bowl, combine the sautéed mixture with crumbled bacon, grated Parmesan cheese, and breadcrumbs. Mix well to combine.
- 5
Fill the Oysters
Spoon the mixture generously over each oyster, ensuring they are well covered.
- 6
Bake
Bake in the preheated oven for about 15-20 minutes, or until the topping is golden brown and bubbly.
- 7
Serve
Remove from the oven and let cool slightly before serving. Enjoy your Oyster Rockefeller warm!
