Cook the Macaroni
In a large pot of boiling salted water, cook the elbow macaroni according to package instructions until al dente. Drain and set aside.

Make the Cheese Sauce
In a saucepan, melt the butter over medium heat. Stir in the flour and cook for about 1 minute, until bubbly. Gradually add the milk, whisking constantly until the sauce thickens. Stir in the cheddar cheese, Monterey Jack cheese, diced jalapeños, salt, and black pepper until melted and smooth.

Combine and Chill
In a large bowl, combine the cooked macaroni and cheese sauce. Mix well and refrigerate for at least 1 hour until firm.

Form the Bites
Once the mixture is firm, scoop out small portions and form them into bite-sized balls. Dip each ball into beaten eggs, then roll in breadcrumbs to coat.

Fry the Cheese Bites
In a large pot or deep fryer, heat the oil to 350°F (175°C). Fry the cheese bites in batches until golden brown and crispy, about 3-4 minutes. Remove and drain on paper towels.
