    In a bowl, mix the flour, cornmeal, salt, black pepper, and cayenne pepper. In another bowl, whisk together the eggs and milk.

    Coat the Fish

    Dip each pollock fillet first in the egg mixture, then coat it with the flour mixture, ensuring an even covering.

    Fry the Fish

    In a large skillet, heat the vegetable oil over medium heat. Once hot, carefully add the coated fillets and fry until golden brown and cooked through, about 4-5 minutes per side. Remove and drain on paper towels.

    Warm the flour tortillas in a dry skillet or microwave. Place a few pieces of fried pollock on each tortilla, top with shredded cabbage, and drizzle with your choice of jalapeño sauce or Asian Zinger.
