    Prepare the Pollock

    Cut the pollock fillets into bite-sized pieces and set aside.

    Set Up Breading Station

    In one bowl, place the flour seasoned with salt, black pepper, paprika, and cayenne pepper. In a second bowl, whisk together the eggs and milk. In a third bowl, place the cornmeal.

    Bread the Fish

    Dip each piece of pollock first into the flour mixture, then into the egg mixture, and finally coat with cornmeal. Ensure all pieces are fully coated.

    Heat the Oil

    In a large skillet or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Fry the Fish

    Carefully place the breaded pollock pieces into the hot oil in batches, being careful not to overcrowd the pan. Fry for about 3-4 minutes on each side, or until golden brown and cooked through. Remove and drain on paper towels.

    Serve hot with hush puppies on the side and tartar or cocktail sauce for dipping.
