Method
Prepare Glass
Build & Shake
Add large ice cubes to the cocktail shaker until roughly 2/3 full to properly chill and dilute the drink.
Measure and pour 2 oz gin, 0.5 oz dry vermouth, 0.5 oz Aperol, 0.5 oz fresh lemon juice and 0.25 oz simple syrup into the shaker.
Add 2 dashes of orange bitters to the shaker.
Shake
Secure the shaker and shake vigorously for 12–16 seconds until the outside of the shaker is well chilled and slightly frosted. This integrates citrus and creates the right dilution.
Strain & Garnish
Discard the ice or water from the prepared glass and double-strain the cocktail into the glass using a Hawthorne and fine mesh strainer to remove small ice chips and any pulp.
Express the oils of one grapefruit twist over the surface of the cocktail by holding the twist with the exterior skin facing down and squeezing gently, then run the twist around the rim and drop it into the drink as a garnish.
Serve immediately. The drink should be bright, slightly bitter-sweet from Aperol with herbal backbone from the gin and a faint anise note from the absinthe rinse.
