Method
Single Cocktail
Chill glass
If desired, chill a large wine glass in the fridge for 10–15 minutes beforehand or fill briefly with ice water then discard.
Fill with ice
Fill the wine glass roughly three-quarters full with large ice cubes (about 1 cup). Large cubes melt slower and keep the drink balanced.
Add aperitif
Pour 2 oz Aperol into the glass for an Aperol Spritz. For a Limoncello Spritz, substitute 2 oz chilled Limoncello instead.
Add Prosecco
Slowly pour 3 oz chilled Prosecco into the glass at a slight angle to preserve bubbles and minimize foam.
Top with soda
Float or gently add 1 oz chilled soda water on top to add lift and lengthen the drink. Adjust up to 1.5 oz if you prefer a lighter spritz.
Garnish and serve
Garnish with one fresh orange slice for the Aperol Spritz or one lemon slice for the Limoncello Spritz. Optionally, add a citrus twist or a cocktail pick. Serve immediately with a short straw or stirring stick.
Batch Preparation (makes ~6 cocktails)
Chill ingredients: Make sure Prosecco and soda water are well chilled before batching. Keep Aperol or Limoncello chilled or refrigerated.
Combine base: In a pitcher or large bottle, combine 12 oz Aperol (or Limoncello), 18 oz chilled Prosecco, and 6 oz chilled soda water. Stir gently to combine, avoiding vigorous stirring to preserve bubbles.
Serve: Serve immediately so the Prosecco remains effervescent. Keep remaining batched spritz chilled and consume within a few hours for best fizz.
