Prepare the Veal
Preheat your oven to 375°F (190°C). Season the veal cutlets with salt and black pepper on both sides.
Coat the Veal
Dip each veal cutlet first in the flour, then in the beaten eggs, and finally coat with bread crumbs. Press the breadcrumbs onto the cutlets to ensure they stick.
Sear the Cutlets
In a large skillet, heat olive oil over medium heat. Add the breaded veal cutlets and cook for about 3-4 minutes on each side until golden brown. Remove and place on a paper towel to drain excess oil.
Assemble the Dish
In a baking dish, spread half of the marinara sauce on the bottom. Place the seared veal cutlets on top, then cover with the remaining marinara sauce. Sprinkle with mozzarella and parmesan cheese.
Bake
Bake in the preheated oven for 20-25 minutes, or until the cheese is bubbly and golden.
Garnish and Serve
Remove from the oven, sprinkle with fresh basil, and let it sit for 5 minutes before serving.
