Prepare the Crabs
Rinse the soft shell crabs under cold water and pat dry with paper towels. Remove the gills and any remaining shell fragments.

Make the Coating
In a shallow dish, mix the flour, cornstarch, salt, black pepper, and cayenne pepper.

Coat the Crabs
Dredge each crab in the flour mixture, ensuring an even coating. Shake off any excess flour.

Heat the Oil
In a large skillet, heat the vegetable oil over medium-high heat until hot but not smoking.

Fry the Crabs
Carefully add the crabs to the hot oil and fry for 3-4 minutes on each side until golden brown and crispy. Remove and drain on paper towels.

Flash Fry the Spinach
In the same oil, add the fresh spinach and fry for about 1-2 minutes until wilted and crispy. Remove and drain on paper towels.

In a separate pan, sauté shrimp until pink. Add cream, lemon juice, and lemon pepper seasoning, stirring until thickened.
