Preparation of Bulgur

    In a medium bowl, combine 1 cup of bulgur wheat with 1.5 cups of boiling water. Cover and let it sit for about 30 minutes, or until the bulgur is tender and the water is absorbed.

    While the bulgur is soaking, finely chop the parsley and mint. Dice the tomatoes and cucumber. Chop the green onions. Set all chopped ingredients aside.

    Once the bulgur is ready, fluff it with a fork to separate the grains. In a large mixing bowl, combine the fluffed bulgur, chopped parsley, mint, tomatoes, cucumber, and green onions.
