Preparation of Kebah

Soak the Bulgur

In a bowl, soak the cracked bulgur wheat in warm water for about 30 minutes until it softens. Drain and set aside.

Cook the Meat

In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until translucent. Add the ground beef, breaking it apart with a spoon, and cook until browned.

Season the Mixture

Stir in cinnamon, allspice, salt, and black pepper. Cook for another 2-3 minutes to blend the flavors.

Combine Ingredients

In a large mixing bowl, combine the soaked bulgur, cooked meat mixture, chopped parsley, and pine nuts. Mix well until all ingredients are incorporated.

Form Kebah

Wet your hands and take a small amount of the mixture to form oval-shaped patties. Press firmly to hold their shape.

Cooking the Kebah

Fry the Kebah

Heat the remaining tablespoon of olive oil in a large skillet over medium heat. Add the formed kebah patties and fry for about 4-5 minutes on each side until they are golden brown and cooked through.

Drain Excess Oil

Once cooked, remove the kebah from the skillet and place them on paper towels to absorb any excess oil.

Serving

Plate the Kebah

Arrange the fried kebah on a serving platter.

Add Accompaniments

Serve with yogurt, lemon wedges, and fresh mint leaves on the side for added freshness.
