Flatbread Preparation
1. Activate Yeast
In a small bowl, mix warm water, sugar, and active dry yeast. Let it sit for about 5-10 minutes until bubbly.
2. Mix Dry Ingredients
In a large mixing bowl, combine all-purpose flour and salt. Mix well.
3. Combine Ingredients
Make a well in the center of the flour mixture and add the activated yeast mixture and olive oil. Stir until a dough begins to form.
4. Knead the Dough
Turn the dough onto a floured surface and knead for about 8-10 minutes until smooth and elastic.
5. Let Dough Rise
Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour, or until doubled in size.

While the dough is rising, prepare the toppings by mixing thyme, sumac, and sesame seeds in a small bowl.
7. Prepare Cheese
If using Syrian cheese, crumble or slice it into small pieces for easy distribution on the flatbread.
Baking
8. Preheat Oven
Preheat your oven to 475°F (245°C). If using a pizza stone, place it in the oven to heat up.
9. Shape the Dough
Once the dough has risen, punch it down and divide it into 2 equal pieces. Roll each piece into a flat circle or oval shape, about 1/4 inch thick.
10. Add Toppings
Transfer the shaped dough onto a baking sheet or pizza peel. Drizzle with olive oil, sprinkle the thyme, sumac, and sesame mixture evenly over the top, and add the Syrian cheese.
11. Bake
Carefully transfer the flatbread into the preheated oven (or onto the pizza stone) and bake for about 10-12 minutes, or until the edges are golden brown and the cheese is melted.
12. Serve
Remove from the oven, let cool slightly, then slice and serve warm.
