Method

Meat Marinade

    Prepare the Marinade

    In a large mixing bowl, combine plain yogurt, minced garlic, ground cumin, ground coriander, ground paprika, ground turmeric, cayenne pepper, olive oil, salt, black pepper, and lemon juice. Mix well until all ingredients are fully incorporated.

    Marinate the Meat

    Add the beef or chicken to the marinade and ensure it is thoroughly coated. Cover the bowl with plastic wrap and refrigerate for at least 2 hours, preferably overnight for maximum flavor.

Cooking the Meat

    Cook the Meat

    Preheat your grill or skillet over medium-high heat. Remove meat from the marinade, allowing excess marinade to drip off. Grill or sauté the meat for about 5-7 minutes per side, or until cooked through and slightly charred. Use a meat thermometer to ensure the internal temperature reaches 75°C (165°F) for chicken and 70°C (158°F) for beef.

    Rest and Slice

    Once cooked, remove the meat from the heat and let it rest for 5 minutes. Slice the meat thinly against the grain.

    Make the Garlic Sauce

    In a small bowl, combine mayonnaise, minced garlic, lemon juice, and salt. Mix until smooth and well combined. Adjust seasoning to taste.

Assembly

    Assemble the Shawarma

    Take a piece of pita or flatbread, add a generous amount of sliced meat, drizzle with garlic sauce, and top with sliced pickles. Roll the bread or fold it over to enclose the filling.

    Serve the shawarma warm, optionally with extra garlic sauce on the side.
