Method

Kebab Preparation

  1. 1

    Marinate the Lamb

In a large bowl, combine the lamb cubes with olive oil, minced garlic, ground cumin, ground coriander, paprika, salt, and black pepper. Mix well to ensure all the lamb pieces are evenly coated. Cover and marinate in the refrigerator for at least 1 hour, preferably overnight for the best flavor.

  2. 2

    Prepare Skewers

After marinating, thread the lamb cubes onto the soaked wooden skewers, leaving a little space between each piece for even cooking.

Rice Preparation

  1. 3

    Cook the Rice

Rinse the basmati rice under cold water until the water runs clear. In a medium saucepan, combine the rinsed rice, water, and salt. Bring to a boil over high heat. Once boiling, reduce the heat to low, cover, and simmer for about 15 minutes or until the rice is tender and the water is absorbed. Remove from heat and stir in the butter. Let it sit covered for an additional 5 minutes before fluffing with a fork.

Salad Preparation

  1. 4

    Make the Salad

In a large bowl, combine the diced cucumber, diced tomato, sliced red onion, and chopped parsley. Drizzle with lemon juice, olive oil, and season with salt to taste. Toss gently to combine.

Grilling

  1. 5

    Grill the Kebabs

Preheat your grill to medium-high heat. Place the skewers on the grill and cook for about 8-10 minutes, turning occasionally, until the lamb is browned and cooked to your preferred doneness.
