Method

Marinating the Meat

  1. 1

    Prepare the Marinade

In a large bowl, combine minced garlic, oregano, cumin, paprika, salt, black pepper, and olive oil. Mix well.

  2. 2

    Marinate the Meat

Cut the pork shoulder or lamb into thin slices and add to the marinade. Ensure all pieces are well coated. Cover and refrigerate for at least 2 hours, preferably overnight.

Making the Tzatziki Sauce

  1. 3

    Prepare the Cucumber

Grate the cucumber and squeeze out excess water using a clean cloth or paper towel.

  2. 4

    Mix the Sauce

In a medium bowl, combine Greek yogurt, grated cucumber, minced garlic, dill, lemon juice, and salt. Stir until well mixed. Refrigerate until ready to use.

Cooking the Meat

  1. 5

    Cook the Meat

Preheat a grill or skillet over medium-high heat. Cook the marinated meat for about 6-8 minutes per side, or until fully cooked and slightly crispy.

  2. 6

    Rest the Meat

Once cooked, remove the meat from heat and let it rest for a few minutes before slicing it into smaller pieces.

Assembling the Gyros

  1. 7

    Prepare the Pita

Warm the pita bread in a dry skillet or microwave for a few seconds to make them pliable.

  2. 8

    Assemble the Gyros

On each pita, layer sliced meat, diced tomato, thinly sliced red onion, and lettuce. Drizzle with tzatziki sauce.

  3. 9

    Serve

Wrap the pita around the filling and serve immediately. Enjoy your homemade gyros!
