Preparation of Falafel

    Soak Chickpeas

    Place the dried chickpeas in a bowl and cover with water. Let them soak overnight (or at least 8 hours) until they are soft and doubled in size.

    Make Falafel Mixture

    Drain and rinse the soaked chickpeas. In a food processor, combine the chickpeas, garlic, onion, parsley, cumin, coriander, baking powder, salt, and black pepper. Pulse until the mixture is coarse but holds together when formed into a ball.

    Form Falafel Balls

    Using your hands, form the mixture into small balls or patties, about 1-2 inches in diameter.

    Fry or Bake Falafel

    Heat olive oil in a frying pan over medium heat. Fry the falafel balls for about 4-5 minutes on each side until golden brown. Alternatively, bake them in a preheated oven at 375°F (190°C) for about 20-25 minutes, flipping halfway through.

    Prepare Vegetables

    Wash and chop the lettuce, tomato, and cucumber into bite-sized pieces.

    Assemble Wrap

    Lay a pita bread or wrap flat on a plate. Add a handful of lettuce, a few slices of tomato, and cucumber. Place 3-4 falafel balls on top, then drizzle with tahini sauce and lemon juice.

    Wrap it Up

    Fold the sides of the pita or wrap inward, then roll it up tightly from the bottom, enclosing the filling. Serve immediately.
