Soak Chickpeas
Place the dried chickpeas in a bowl and cover with water. Let soak overnight or for at least 8 hours.

Shape the Falafel
Using your hands, form the mixture into small balls or patties, about the size of a golf ball.

Drain
Remove the falafel from the oil and drain on paper towels. Set aside.
Pita Bread

Activate Yeast
In a small bowl, mix warm water, sugar, and yeast. Let sit for about 10 minutes until frothy.

In a large bowl, combine flour and salt. Make a well in the center, pour in the yeast mixture and olive oil. Mix until a dough forms.

Turn the dough out onto a floured surface and knead for about 10 minutes until smooth and elastic.
