Preparing the Falafel

Soak Chickpeas
If using dried chickpeas, soak them in water overnight. If using canned chickpeas, rinse and drain them.

Add Flour
Transfer the mixture to a bowl, and sprinkle in the flour. Mix until combined. The mixture should hold together; if too wet, add a bit more flour.

Chill Mixture
Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to firm up the mixture.

Shape Falafel
Once chilled, scoop out portions of the mixture and form them into balls or patties.

Heat Oil
In a deep pan, heat the vegetable oil over medium-high heat until hot (about 350°F or 175°C).

Fry Falafel
Fry the falafel balls in batches, cooking for about 3-4 minutes on each side until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.

Adjust Consistency
If the sauce is too thick, add more water, one tablespoon at a time, until desired consistency is reached.

Drizzle in the olive oil and mix until well combined.
