Prepare the Chicken
Cut the chicken breasts into strips, about 1 inch wide.

Bread the Chicken
Dip each chicken strip first into the flour, shaking off excess, then into the beaten eggs, and finally into the breadcrumb mixture. Press the breadcrumbs onto the chicken to ensure they adhere.

Heat Oil
In a large skillet, heat vegetable oil over medium-high heat until it shimmers.

Fry the Chicken
Carefully place breaded chicken tenders into the hot oil, cooking in batches if necessary. Fry for 3-4 minutes on each side or until golden brown and cooked through. Remove and drain on paper towels.

Prepare the Potatoes
Wash and peel the russet potatoes. Cut them into thin strips, about 1/4 inch thick.

Soak the Fries
Soak the potato strips in cold water for at least 30 minutes to remove excess starch. Drain and pat dry.

Heat Oil for Frying
In a separate large pot or deep fryer, heat vegetable oil to 350°F (175°C).

Carefully add the potato strips to the hot oil in batches, frying until golden brown and crispy, about 4-5 minutes. Remove and drain on paper towels, then season with salt to taste.
