Method

Beef Kabobs

  1. 1

    Prepare the Marinade

In a large bowl, combine olive oil, soy sauce, lemon juice, minced garlic cloves, ground black pepper, and salt. Mix well.

  2. 2

    Cut the Beef and Vegetables

Cut the beef sirloin into 1-inch cubes. Chop the bell peppers and onion into similar-sized pieces.

  3. 3

    Marinate the Beef

Add the beef cubes to the marinade and toss to coat. Cover and refrigerate for at least 30 minutes.

  4. 4

    Assemble the Skewers

Thread the marinated beef, bell peppers, and onion onto the skewers, alternating between beef and vegetables.

  5. 5

    Grill the Kabobs

Preheat the grill to medium-high heat. Grill the skewers for about 10-12 minutes, turning occasionally, until the beef is cooked to your desired doneness.

Rice

  1. 6

    Cook the Rice

In a medium saucepan, bring 2 cups of water to a boil. Add 1 cup of long-grain rice and salt to taste. Stir, cover, and reduce heat to low. Cook for about 18-20 minutes or until the rice is tender and the water is absorbed.

  2. 7

    Add Butter

Once cooked, remove from heat and stir in 1 tablespoon of butter. Fluff with a fork.

Side

  1. 8

    Prepare the Salad

Dice the cucumber and tomato, and thinly slice the red onion. In a bowl, combine the chopped vegetables.

  2. 9

    Dress the Salad

Drizzle with olive oil, lemon juice, and season with salt and ground black pepper to taste. Toss to combine.
