Preparation

    Preheat the Oven

    Preheat your oven to 350°F (175°C).

    Prepare the Nut Filling

    In a food processor, combine the walnuts, pistachios, ground cinnamon, and granulated sugar. Pulse until the nuts are finely chopped but not powdered. Set aside.

    Melt the Butter

    In a small saucepan, melt the unsalted butter over low heat. Once melted, remove from heat and let it cool slightly.

Assembling the Baklava

    Layer the Filo Pastry

    Take a sheet of filo pastry and lay it in a greased 9x13 inch baking dish. Brush the sheet with melted butter. Repeat this process for 8-10 layers, brushing each layer with butter.

    Add the Nut Filling

    Spread half of the nut filling evenly over the layered filo pastry. Add another 4-5 layers of filo, brushing each with melted butter. Repeat the process with the remaining nut filling and then top with another 8-10 layers of filo, brushing each layer with butter.

    Cut the Baklava

    Using a sharp knife, cut the assembled baklava into diamond or square shapes. Make sure to cut all the way through to the bottom.

Baking

    Bake the Baklava

    Place the baking dish in the preheated oven and bake for 45-50 minutes, or until the top is golden brown and crisp.

Making the Honey Syrup

    Prepare the Honey Syrup

    While the baklava is baking, combine water, granulated sugar, honey, and vanilla extract in a saucepan. Bring to a boil, then reduce the heat and let it simmer for about 10 minutes. Remove from heat and let cool.

Finishing Touches

    Add the Syrup

    Once the baklava is done baking, remove it from the oven and immediately pour the cooled honey syrup evenly over the hot baklava. Allow it to absorb the syrup for at least 4 hours or overnight before serving.
