Baba Ghanoush Preparation

Roast the Eggplant
Preheat your oven to 400°F (200°C). Prick the eggplants with a fork in several places to allow steam to escape. Place them on a baking sheet and roast in the oven for about 30-40 minutes, or until the skin is charred and the flesh is soft.

Scoop and Blend
Once roasted, remove the eggplants from the oven and allow them to cool slightly. Cut them in half lengthwise and scoop out the flesh into a food processor. Add tahini, garlic cloves, lemon juice, olive oil, salt, and ground cumin. Blend until smooth and creamy.

Transfer the baba ghanoush to a serving bowl. Drizzle with a little olive oil, and sprinkle with fresh parsley and smoked paprika for garnish.

Prepare the Pita
Brush the pita bread with olive oil on both sides and sprinkle with salt. Preheat a skillet or grill pan over medium heat.
