    Prepare the Eggplant

    Preheat your grill or oven to high heat. Prick the eggplants all over with a fork to prevent them from bursting. Place the eggplants on the grill or in the oven and roast for 30-40 minutes, turning occasionally, until the skin is charred and the flesh is very soft.

    Cool and Scoop

    Once the eggplants are cooked, remove them from the grill or oven and let them cool for about 10 minutes. Once cool enough to handle, cut the eggplants in half lengthwise and scoop out the soft flesh into a mixing bowl, discarding the skins.

    Blend the Ingredients

    Add tahini, minced garlic, lemon juice, olive oil, salt, and smoked paprika to the bowl with the eggplant flesh. Using a fork or a blender, blend the mixture until smooth and creamy. Adjust the seasoning to taste.

    Serve

    Transfer the baba ghanoush to a serving bowl, drizzle with additional olive oil, and sprinkle with fresh parsley. Serve with pita bread or vegetable sticks.
