Filling Preparation

    Sauté the Aromatics

    In a medium saucepan, melt the butter over medium heat. Add the finely chopped onion and minced garlic, and sauté until the onion is translucent, about 5 minutes.

    Make the Roux

    Sprinkle the flour over the sautéed onion and garlic, stirring continuously for about 2 minutes to form a roux. The mixture should be slightly golden.

    Add Chicken and Broth

    Slowly add the chicken broth, stirring constantly to prevent lumps. Continue cooking until the mixture thickens, about 5 minutes.

    Mix in Chicken and Seasonings

    Stir in the shredded chicken, salt, black pepper, nutmeg, and chopped parsley. Mix well and cook for an additional 2-3 minutes. Remove from heat and let cool completely.

Shaping and Breading

    Shape the Croquettes

    Once the filling has cooled, use your hands to shape it into small logs or balls, about 2 inches in length.

    Prepare the Breading Station

    Set up a breading station with beaten eggs in one bowl, breadcrumbs in another, and a pinch of salt in the breadcrumbs. Dredge each croquette in the egg, then roll in the breadcrumbs to coat evenly.

Frying

    Heat the Oil

    In a deep frying pan or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Fry the Croquettes

    Carefully add the breaded croquettes to the hot oil in batches, frying for about 3-4 minutes on each side or until golden brown. Remove with a slotted spoon and drain on paper towels.

    Serve the croquetas warm with your choice of dipping sauce, such as aioli or a spicy tomato sauce.
