Soak the Cod

Begin by soaking the salted cod in cold water for 24 to 48 hours, changing the water every 8 hours to remove excess salt.

Prepare the Cod

After the cod has been soaked, drain and rinse it under cold water. Pat dry with paper towels.

Sauté Garlic

In a large skillet, heat the olive oil over medium heat. Add the garlic cloves, lightly crushed but not chopped, and the whole red chili pepper. Sauté for about 2-3 minutes until the garlic is golden but not burnt.

Cook the Cod

Carefully add the cod fillets to the skillet, skin-side down. Cook for about 5 minutes without moving the fillets, allowing them to absorb the flavors.

Create the Pil-Pil Sauce

After 5 minutes, gently flip the cod fillets. Continue cooking for another 5-7 minutes, occasionally spooning the oil over the fillets to create the pil-pil emulsion.

Garnish and Serve

Once the cod is cooked through and the sauce has thickened, remove from heat. Garnish with chopped fresh parsley before serving.
