Preparing the Pork Tenderloin

Preheat the oven
Preheat your oven to 200°C (400°F).

Season the pork
Rub the pork tenderloin with olive oil, salt, and black pepper. Ensure it is evenly coated.

Sear the pork
In a large skillet over medium-high heat, add the pork tenderloin. Sear each side for about 3-4 minutes until browned.

Add garlic
Add the whole garlic cloves to the skillet with the pork and cook for an additional 2 minutes.

Transfer to oven
Transfer the skillet to the preheated oven and roast for about 20-25 minutes, or until the internal temperature reaches 63°C (145°F).

Rest the pork
Once cooked, remove the pork from the oven and let it rest for 5-10 minutes before slicing.

Sauté the vegetables
In a separate skillet, heat a tablespoon of olive oil over medium heat. Add the chopped vegetables and fresh thyme. Sauté for about 8-10 minutes, or until the vegetables are tender.
