Prepare the Ingredients
Slice the chorizo sausage into thick rounds. Mince the garlic cloves and finely chop the onion.

Sauté the Aromatics
In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Add the minced garlic and cook for an additional 1-2 minutes until fragrant.

Cook the Chorizo
Add the sliced chorizo to the skillet and cook for about 5-7 minutes, stirring occasionally, until the chorizo is browned.

Add Wine and Seasoning
Pour in the red wine, add the bay leaves, paprika, salt, and black pepper. Stir to combine all the ingredients.

Simmer
Reduce heat to low and let the mixture simmer for about 15-20 minutes, allowing the flavors to meld and the sauce to thicken. Stir occasionally.

Serve
Remove from heat, discard the bay leaves, and serve the chorizo al vino warm, ideally with crusty bread or over rice.
