Prepare the Vegetables
In a large skillet over medium heat, add a little oil and sauté the sliced mushrooms, onions, and bell peppers until they are soft and caramelized, about 5-7 minutes. Remove from heat and set aside.

Cook the Sirloin
In the same skillet, increase the heat to medium-high. Add the thinly sliced sirloin and cook until browned and cooked to your liking, about 3-5 minutes. Season with salt and pepper to taste.

Assemble the Sandwiches
Slice the hoagie rolls lengthwise. Spread a generous amount of horseradish mayo on each side of the rolls. Layer with sautéed vegetables, cooked sirloin, and top with cheddar cheese.

Melt the Cheese
Place the assembled sandwiches under a broiler or in a hot oven until the cheese is melted and bubbly, approximately 2-3 minutes.

Serve with Au Jus
Heat the beef broth or au jus in a small saucepan. Serve the sandwiches hot, with the au jus on the side for dipping.
