Prepare the Chipotle Aioli
In a small bowl, combine 1/2 cup mayonnaise, 1 tablespoon chipotle in adobo sauce, and 1 teaspoon lime juice. Mix well and set aside.

Cook the Bacon
In a skillet over medium heat, cook the bacon slices until crispy. Remove and drain on paper towels.

Form the Patties
In a mixing bowl, season the ground beef with salt and pepper. Form into two equal-sized patties.

Cook the Burgers
In the same skillet, cook the patties over medium-high heat for about 4-5 minutes on each side or until they reach your desired doneness. Place a slice of pepper jack cheese on each patty during the last minute of cooking to melt.

Prepare the Vegetables
Slice the jalapeños, tomato, and onion. Wash the lettuce leaves.

Assemble the Burger
On the bottom half of the brioche bun, spread a generous amount of chipotle aioli. Layer with lettuce, tomato, onion, jalapeños, the cooked patty with melted cheese, and crispy bacon. Top with the other half of the bun.

Serve immediately with your favorite side dish.
